I wanted a down-home, comfy cookie. No bells and whistles, no nuts, no chocolate chips, no oatmeal. No spicy ginger, nutty peanut butter, or cloying molasses. I wanted a cookie that could be held in one hand with a book in the other. For Ellie, I wanted simple sweetness. I think these fit the bill.
Ingredients
- 1 C salted butter
- ½ C sugar
- 1 C brown sugar
- 2 eggs
- 2 t. vanilla extract
- 3 C flour
- 1 t. salt
- 1 t. baking powder
- 1 t. baking soda
Preparation
- Preheat oven to 350˚.
- Cream butter, sugar, and brown sugar very well. Add the eggs and vanilla, and continue to cream until well blended.
- Add the baking soda, baking powder, salt, and flour. Refrigerate the dough for 30 minutes to an hour.
- Drop the cookies onto a silpat or lined baking sheet. Bake for 10-12 minutes, or until lightly brown.
