Ellie’s Cookies

I wanted a down-home, comfy cookie. No bells and whistles, no nuts, no chocolate chips, no oatmeal. No spicy ginger, nutty peanut butter, or cloying molasses.

I wanted a cookie that could be held in one hand with a book in the other. For Ellie, I wanted simple sweetness. I think these fit the bill.

Ingredients

  • 1 C salted butter
  • ½ C sugar
  • 1 C brown sugar
  • 2 eggs
  • 2 t. vanilla extract
  • 3 C flour
  • 1 t. salt
  • 1 t. baking powder
  • 1 t. baking soda

Preparation

  1. Preheat oven to 350˚.
  2. Cream butter, sugar, and brown sugar very well. Add the eggs and vanilla, and continue to cream until well blended.
  3. Add the baking soda, baking powder, salt, and flour. Refrigerate the dough for 30 minutes to an hour.
  4. Drop the cookies onto a silpat or lined baking sheet. Bake for 10-12 minutes, or until lightly brown.
